用到:新鲜空心菜、盐、味精、干辣椒、大蒜、植物油
1、买一把空心菜,能自己挑选的话,自然要选择新鲜的、脆嫩的,可以拿出一根掐一下,可以轻松折断、掰断,就说明很新鲜,放心买。

2、买来的空心菜,直接放在盐水中浸泡一会儿,因为我担心里面会有虫卵、脏东西什么的,所以最好用盐水泡一下,然后再冲洗几遍,洗净以后将上面的水分控干,接下来放在案板上切成小段。

3、切好后的空心菜,如果不直接下锅的话,这个时候我们需要准备一盆水,将空心菜放进去,顺便倒上适量的白醋,这样来浸泡着。将空心菜浸泡在酸性的水中,就不会出现氧化情况了,这是第1招。

4、接下来再把干辣椒和大蒜准备一下,全部切好后,下面准备来烹饪。将锅子准备好,将其烧热以后,把切好的干辣椒和蒜末倒入锅子里,用铲子不停翻炒,直至炒出浓郁的香味,紧接着把空心菜捞出来,尽可能将水分沥干。

5、沥干水分后的空心菜,倒在锅子里开始翻炒就可以了,这个时候一定要注意一点,必须要开大火来翻炒,炒制的过程中才不会出水,并且炒制时间短,空心菜不会氧化发黑,这是第2招。
