1.黄豆洗净,提前一晚上泡发备用,猪蹄剁小块,冷水下锅,加葱姜,料酒去腥,煮开撇去浮沫,捞出洗净。

1.自己喜欢的鱼片成片,加入胡椒粉,一勺淀粉,料酒抓拌均匀腌制5分钟,起锅烧水,水开下鱼片焯水30秒盛出备用。
2.青辣椒洗净切段,不粘锅里不用放油,把青辣椒炒至表皮有虎皮状盛出切碎。
3.起锅烧油,油热下蒜末炒香,下入剁椒碎,倒入鱼片,加入2勺生抽,1勺蚝油,大火翻炒均匀就可以开吃了(翻炒的时候轻点搅动)。

1.先调个糖醋汁,碗里加入4勺料酒,生抽5勺,白糖3勺,醋6勺,老抽2勺搅拌均匀备用。
2.排骨冷水下锅,加料酒去腥,煮开煮出浮沫捞出排骨,洗净沥干水分备用。
3.起锅烧油,油热下冰糖炒出枣红色糖色,下入排骨,翻炒均匀至每根排骨上色,加入姜片,倒入糖醋汁,加入开水,没过食材就可以了。
4.大火煮开转小火,盖上锅盖焖煮50分钟,开盖加一大勺香醋,最后开大火收汁至汤汁浓稠就可以出锅开吃了。
